The Bombay Punch recipe features a delightful combination of brandy, maraschino, and champagne.
It is one of two very old recipes selected for this collection, albeit with a modern addition or two, like club soda. (They'd have used it if they had it, right?)
2 cups fresh squeezed lemon juice
Powdered sugar or simple syrup to taste
3 cups brandy
3 cups dry sherry
1/3 cup maraschino
1/3 cup orange liqueur
3 750-ml bottles champagne
1 quart club soda
Chill all ingredients well before mixing.
Sweeten the lemon juice to taste with sugar or simple syrup.
Transfer the lemon mixture to a punch bowl. Stir in the brandy, sherry, maraschino, and orange liqueur.
Add the champagne and club soda last. Stir once.
Float an ice mold. If desired, garnish with slices of orange or lemon.
Makes 40 servings.
