Cinnamon Almonds Recipe

Glazed Cinnamon Almonds

1 egg white
Pinch of salt
1 1/2 pounds (about 3-3 1/2 cups) almonds
1/2 cup sugar
1 teaspoon cinnamon
Butter
In a medium bowl, beat the egg white and salt until soft peaks form.
Pour the nuts into the bowl and stir to coat well.
Combine the sugar and cinnamon, and sprinkle over the almonds. Mix well.
Turn the mixture out onto a buttered shallow baking pan, like a jelly roll pan, and spread the nuts out evenly.
Bake at 300°, stirring occasionally, until crisp, about 45 minutes.
