What do you call small sandwiches made with cream cheese to which a little pineapple, chopped nuts, nutmeg and pepper have been added?
Either a "classic tea sandwich" or "Pineapple Cream Cheese Sandwiches."
It's a tough choice, but not as tough as deciding whether
you're going to try that or not. After all, it doesn't even go on a
3/4 cup soft butter
1 teaspoon cinnamon or nutmeg
20 slices bread of your choice
1 1/2 cups soft cream cheese
1/2 cup pineapple, finely chopped and drained
1/2 cup finely chopped nuts
Salt and pepper
Combine the butter with cinnamon or nutmeg and spread the mixture over 1 side of each slice of bread.
In a small bowl, cream the cream cheese, if necessary, and stir in the pineapple and nuts. Add salt and pepper to taste.
Spread the cream cheese mixture evenly over 10 slices of bread
and top with the other 10 slices. Remove the crusts and cut each
sandwich into 4 quarters or 3 fingers.
Makes 40 quarter tea sandwiches, 30 fingers.
