Fluffy Scrambled Eggs Recipe

Do you favor a creamy or fluffy scrambled eggs recipe? Everyone seems to choose a camp. A little milk will make your scrambled eggs creamy, a pinch of baking powder will make your eggs fluffy, and cooking them just right will give you the best of both worlds. Like sprinkles on your ice cream, the addition of goodies to your scrambled eggs makes a company-special dish, called, affectionately, a Scramble or Scram for short.
Fluffy Scrambled Eggs for 6 12 large eggs 2 tablespoons milk or cream Pinch of baking powder (optional) 1/4 teaspoon salt, or to taste Pinch of pepper 2 tablespoons butter
Beat the eggs thoroughly together with the milk, baking powder, salt and pepper. Melt the butter in a large skillet, preferably non-stick, over medium heat, no higher. Add the beaten eggs to the skillet and cook them slowly, stirring and scraping the sides and bottom somewhere between frequently and constantly. Don't cook them dry.
Make a Scram(ble) "Green onions and ham" is the favorite at my house. Before cooking the eggs, sauté 1/4 cup chopped onions or green onions and 1 cup (total) of 1 or 2 of the following, chopped: Shrimp, or other seafoodHamKielbasaChorizoGreen or red pepperMushrooms (drain before adding eggs)Fresh AsparagusAdd a little more butter to the skillet, if necessary, add the beaten eggs and cook as above. If you like, top with 1/2 cup shredded cheese before serving. And Salsa is a natural served with scrambled eggs.
