Grilled Lemon Chicken Recipe
Great Broiled or Baked, Too
Grilled Lemon Chicken is a barbecue recipe with a decidedly Asian flavor and lots of versatility. Lemon, white wine and soy sauce combine for a particularly delicious marinade, making this a universally favorite grilled chicken recipe. But this easy dish can be broiled or baked as well without compromise.
How to Choose a Barbecue Grill
Grilled Lemon Chicken
5 lbs. chicken thighs and/or drumsticks
Marinade:
1/2 cup soy sauce
1/4 cup white wine
1/2 cup lemon juice
1 teaspoon hot pepper sauce, or to taste
4 green onions, finely chopped
2 cloves garlic, minced
Prepare the marinade several hours ahead or the night before. Add the chicken pieces and marinate in the refrigerator 6 to 8 hours or overnight, turning occasionally. Reserve the marinade for basting.
For grilling or broiling:
Grill the chicken pieces over a medium-hot grill or under the broiler for about 15 minutes each side. Baste occasionally with the reserved marinade.
For baked lemon chicken:
Place the marinated chicken in a single layer in a prepared baking dish (or two). Bake at 400° for about 40 minutes, basting occasionally.
(Tip: You can partially precook the chicken in the microwave before cooking, if desired, and grill it or bake it for a shorter time.)
Makes 10 to 12 servings.
