The Grilled Salmon recipe is accompanied by two great sauces from which to choose. Red Pepper Sauce is prepared with roasted red bell peppers and garlic. Rosemary Wine Sauce is made with, well, white wine and rosemary, of course, with lemon and onion. One sweet, one tangy, both excellent compliments of grilled salmon in taste and color.
How do you know when your salmon is cooked to perfection? Take a look.

How to grill salmon to perfection:
Rub a little olive oil over the salmon fillets, then lightly salt and pepper them. Place them over a medium-hot grill and cook for about 3-5 minutes each side, turning only once.
You may need to adjust cooking time one way or the other depending on the thickness of the fillets. The salmon is grilled to perfection when it is firm to the touch and the juices have begun to release.
Transfer to a warm platter. Serve with either Red Pepper Sauce or Rosemary Wine Sauce below. 10-12 servings.
Broil or grill the red peppers for about 5 minutes. Remove from the grill, cover, cool, and remove the skins. Place the peeled red peppers and the remaining sauce ingredients in a blender or food processor and process until smooth. Spoon 2 or 3 tablespoons of Red Pepper Sauce down the center of each serving of salmon.
Place all ingredients in a large skillet over high heat and reduce by half. Once you have transferred the grilled salmon to a platter, pour some of the Rosemary Wine Sauce over each serving.
