Grilled Salmon Recipe
with Two Excellent Sauce Recipe Choices
Not one, but two great sauce recipes to accompany the Grilled Salmon Recipe. One sweet, one tangy, both excellent compliments of grilled salmon in taste and color.
How do you know when your salmon is cooked to perfection? Take a look.
Grilled Salmon with Red Pepper Sauce or Rosemary Wine Sauce
3 lbs. salmon, cut into (4-ounce) serving-size pieces
Extra-virgin olive oil
Salt and pepper
How to grill salmon to perfection:
Rub a little olive oil over the salmon fillets, then lightly salt and pepper them. Place them over a medium-hot grill and cook for about 3-5 minutes each side, turning only once.
You may need to adjust cooking time one way or the other depending on the thickness of the fillets. The salmon is grilled to perfection when it is firm to the touch and the juices have begun to release.
Transfer to a warm platter. Serve with either Red Pepper Sauce or Rosemary Wine Sauce below. 10-14 servings.
Red Pepper Sauce
6 red bell peppers, medium size
6 cloves roasted garlic
2 tablespoons red wine vinegar
1 tablespoon olive oil
Salt and pepper to taste
Broil or grill the red peppers for about 5 minutes or so. Remove from the grill, cover, cool, and remove the skins. Place the peeled red peppers and the remaining sauce ingredients in a blender or food processor and process until smooth. Spoon 2 or 3 tablespoons of Red Pepper Sauce down the center of each serving of salmon.
Rosemary Wine Sauce
1 1/2 cups white wine
3/4 cup of fresh lemon juice
1 cup minced onion
1 teaspoon dried rosemary
Place all ingredients in a large skillet over high heat and reduce by half. Once you have transferred the grilled salmon to a platter, pour some of the Rosemary Wine Sauce over each serving.
