Party Tortilla Wraps,

Classic, Modern and Gourmet Sandwich Ideas for all Occasions

The long-awaited party sandwich recipes are here! (Okay, not all of them, but what's not here is on its way. And if you're nice I won't tell the Earl of Sandwich story.) Almost no occasion can't benefit from some great sandwich ideas. I sometimes even serve sandwiches for dinner parties, albeit casual ones.

Here are a few tricks I learned along the way:

  1. For larger crowds, serve a variety of party sandwiches (as opposed to those things you throw in the kids' lunch boxes.)

    When practical, cut the sandwiches into smaller portions, as you would for tea sandwiches. This really cuts back on waste and allows everyone to sample everything.

    The kind of bread you use for your sandwiches is not written in stone (except for Reuben Sandwiches.) Use what you like, no matter what the recipe calls for.

Tortilla Wraps

Tortillas come in party colors and interesting flavors, and they're pretty low-fat. The other good news is that most any sandwich can be made into a Tortilla Wrap like this:

Spread the dressing to within half an inch of the edges of a flour tortilla. Add a layer of lettuce. Top with a thin layer of lunch meat, cheese, and/or other fillings. If the filling is not thin-sliced and will not roll easily-- chop it. Roll up tightly. Wrap in plastic wrap and refrigerate for an hour or two.

Unwrap the wraps and slice in half, on an angle is nice. Arrange the Tortilla Wraps on a serving platter and serve.

Hummus in Pita Bread

3 cups hummus
12 mini pitas
Chopped olives and tomatoes, optional
Cut the pita pockets in half and fill each with about 2 tablespoons of Hummus. Top with chopped olives and tomatoes, if desired.

Makes 24 tea sandwiches.
