Classic Egg and Potato Salad
Roasted Red Potato Salad


Potato salad recipes are among the best of all barbecue and picnic food ideas but appreciated year-round, barbecue or not. Both the traditional Egg and Potato Salad and Roasted Red Potato Salad recipes get rave reviews. But for really special occasions you might want to try our Gourmet Potato Salad.


Traditional Egg and Potato Salad

"This is the best potato salad I've ever had," is nice to hear, right up until your good friend's husband adds, "I wish YOU could make potato salad like this, honey."

2 pounds new potatoes
5 or 6 hard-cooked eggs, cut chunky-style
1 (4-ounce) jar diced pimiento
1 small onion, chopped
4 celery heart stalks, sliced
1/2 cup mayonnaise
2 tablespoons mustard
2 teaspoons salt
1/2 teaspoon pepper

  • Simmer the potatoes in a large pot with water to cover until tender. Cool.
  • Peel the potatoes and cut them into 1/2" chunks.
  • Stir in the remaining ingredients. Chill for several hours.


    Roasted Red Potato Salad

    Roasting the potatoes gives this potato salad an entirely different flavor. It's good warm or cool, making it a great picnic food idea.

    Using the "Traditional" recipe above:

  • Substitute red potatoes for the new potatoes. Cut the raw, unpeeled red potatoes into 1/2" chunks first. Coat them with a little olive or vegetable oil and roast them on a cookie sheet in a 350° oven until tender, about 15 or 20 minutes.
  • Add the remaining ingredients while the potatoes are still warm, substituting deli mustard for regular. Serve warm or cool.
