Brunch dabs a toe in dinner fare with the Roasted Asparagus recipe, but you'll get used to the idea quickly.
There are four things you should know about roasted asparagus:
1. It has an entirely different taste and texture than steamed asparagus, 2. it's delicious, 3. it's out of the ordinary, and 4. it's easy to prepare.
4-5 pounds fresh asparagus (@ 2 bunches)
Salt and pepper
Snap the tough, white ends of asparagus off and discard them.
Spread the asparagus spears on a baking sheet, foil-lined for easy clean-up. Brush them lightly with olive oil then salt and pepper them to taste.
Bake the asparagus in a 375° oven just until tender-crisp, 10-15 minutes, turning once. Serves 8-12.
For a little color or added interest, toss in a handful of chopped garlic and/or red bell pepper to roast with the asparagus.
