Roasted Asparagus Recipe


Brunch dabs a toe in dinner with the Roasted Asparagus recipe, but you'll get used to the idea quickly.

It's delicious, out of the ordinary and easy to prepare. And Roasted Asparagus has an entirely different taste and texture than steamed asparagus.

I think you'll like it.

I've paired it with Crab Cakes on the Brunch Menu Ideas page, but it is also exceptional with Scrambled Eggs and Salmon, or Eggs Benedict.


Roasted Asparagus

4-5 pounds fresh asparagus (@ 2 bunches)
Olive oil
Salt and pepper

  • Snap the tough, white ends of asparagus off and discard them.

      Trick: Simply bend the lower half of the asparagus spears and they will snap at exactly the right spot.

  • Spread the asparagus spears on a baking sheet, foil-lined for easy clean-up.

  • Brush them lightly with olive oil.

  • Salt and pepper them to taste.

  • Bake the asparagus in a 375° oven just until tender-crisp, 10-15 minutes, turning once.

  • Serves 8-12.
