It's the salsa recipe you've been wanting, for several reasons:
Corn and Black Bean Salsa
2 large tomatoes, chopped
1 or 2 jalapeno peppers, seeded and finely chopped
2 green chiles, chopped
1/2 medium onion, chopped
1 very small green bell pepper, finely chopped
1/3 cup corn kernels
2 teaspoons chopped cilantro (1 teaspoon dried)
1 heaping tablespoon black bean garlic sauce or
1 tablespoon black beans and 2 cloves garlic, chopped
1 teaspoon sugar
2 teaspoons cider vinegar
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
Salt and pepper to taste
1/2 cup (extra) black beans, optional
Combine all ingredients in a serving bowl.
Corn and Black Bean Salsa pairs perfectly with tortilla chips or warm rolled tortillas. It's great with omelets and scrambled eggs, too. Makes about 3 cups.
For an interesting flavor-melding effect, peel the tomatoes before chopping them.
Combine with the rest of the ingredients and microwave on high for 2
minutes. Chill before serving.
