Salsa DipCorn Salsa with Black Beans 2 large tomatoes, peeled 1 or 2 jalapeno peppers, seeded and finely chopped 2 green chiles, chopped 1/2 medium onion, chopped 1 very small green bell pepper, finely chopped 1/3 cup corn kernels 2 teaspoons chopped cilantro (1 teaspoon dried) 1 heaping tablespoon black bean garlic sauce or 1 tablespoon black beans and 2 cloves garlic, chopped 1 teaspoon sugar 2 teaspoons cider vinegar 1/4 teaspoon dried basil 1/4 teaspoon dried oregano Salt and pepper to taste
Combine all ingredients and microwave on high for 2 minutes. Chill before serving. Pairs perfectly with tortilla chips or warm rolled tortillas. Makes about 3 cups.
