"Sausage in a Blanket"


This is an unusual sausage appetizer recipe featuring sausage in a blanket of bacon, English-style, rather than the more common bread-wrapped "pigs."

Flavored with a mix of jalapenos and apricot preserves, it is a deliciously unlikely marriage of foods and a terrific party appetizer.




Sausage in a Blanket

This recipe has gotten a slight makeover, with more practical direction, but it's still the spicy little flavor sensation it has always been.

1/2 cup apricot preserves
2 jalapeno peppers, seeded and finely chopped
2 teaspoons cayenne pepper
24 small, 12 medium or 6 large plain sausages
12 slices bacon
Toothpicks

In a medium bowl, stir together the apricot preserves, jalapenos, and cayenne. Set aside.

Cut medium or large sausages into 2 or 4 pieces, respectively, creating 24 pieces total. Cut the bacon strips in half crosswise.

Generously coat each piece of bacon with the apricot-jalapeno mixture; a pastry brush works well for this. Wind a strip of bacon around each sausage and secure with a wooden toothpick. Transfer them to a broiler pan lined with aluminum foil for easier clean-up.

Bake them in a preheated 375° oven until the sausages are heated through and the bacon is crisp, about 20 minutes. Broil the sausages for the last few minutes of cooking, if desired.

Makes 24 appetizers.
