Smoked Salmon Sandwiches

Scrumptious Tea Sandwich Recipe

These smoked salmon sandwiches model the classic combination of cream cheese and smoked salmon. Accessorized with capers, lemon and black pepper, expect little flavor sensations on your tongue.

But, you don't have to save them for a tea party. I sometimes make these for lunch or brunch for family and friends with sliced tomato and sourdough bread, which is not a "regular" at tea parties.

Either way, they're pretty classy and absolutely delicious.



Smoked Salmon Sandwiches

1 cup soft cream cheese
20 slices bread, thin-sliced, your choice
1/2 cup capers
12 ounces thin-sliced smoked salmon
Juice of 1 lemon
Black pepper

Spread the cream cheese on one side of each slice of bread. Dot with capers.

Arrange the smoked salmon on half of the bread slices and brush with lemon juice. Pepper generously.

Top with the other 10 slices, remove the crusts and cut tea -sandwich fashion.

Makes 40 tea sandwiches (quarters) or 30 finger sandwiches.
