Stir-Fry Basics

Have you noticed? Stir-fry sauce recipes are hard to come by on their own. In most recipes, the sauce is intricately tied to the whole stir-fry process, not an addition. But that's not written in stone.

There is a basic formula for stir-frying that lets you pick a sauce to go with what you already have on hand, use up those bits of leftovers to make something wonderful, and catapult right over that old, inconvenient thinking.




Stir-Fry Basics

Stir-frying is quickly cooking bite-size pieces of food in hot oil, stirring and tossing to cook evenly.

  1. It goes quickly, so have all ingredients cut, measured, mixed, and within reach before you start cooking.

    Use vegetable oils that will not burn at high heat, like canola, peanut, or soybean oil.

    A wok is ideal for stir-frying because of its high sides, but a large heavy skillet gets the job done, too.

    Don't over-cook. Fry meats and seafood just until cooked through; fry vegetables just until tender-crisp, starting with those that take longest to cook.

    Cook large amounts in batches or you'll be steaming, not stir-frying. Vast difference.

The formula: ("Meat" includes beef, pork, poultry and seafood)

Stir-fry the meat in a little oil and remove it from the pan. Stir-fry the vegetables in a little more oil. Add the sauce and heat. Return the meat to the pan. When the vegetables are tender-crisp, the meat is heated through and the sauce is thickened, you're done. Serve the stir-fry over rice or noodles, or not.

  1. Note: Whenever one of the stir-fry sauce recipes calls for ginger and/or garlic, you have the option of frying those with the meat, rather than the sauce, to flavor-boost the meat.


Stir-Fry Sauce Recipes

These stir-fry sauce recipes are geared for 1-1/2 pounds of meat, chicken or seafood. As a rule, the 1-1/2 pounds will feed 6 adults, when some vegetables, rice, noodles, or a side dish is involved. And, of course, you can always substitute veggies for meat to create a vegetarian stir-fry.

Note:  If your sauce contains cornstarch, always stir it before adding it to the pan; cornstarch settles. 


Simple Sauce

Good with mixed vegetables, (vegetarian sauce) or with sea scallops or shrimp, with green beans, onions, green onions, celery, and baby corn

1 1/2 cups vegetable or chicken broth
3 tablespoons dry sherry
2 tablespoons soy sauce
1 tablespoon minced ginger
2 cloves minced garlic
2 tablespoons cornstarch

 

Sesame-Oyster Sauce

Good with beef or pork, with mushrooms, green onions and cashews

1 tablespoon fresh minced ginger
3 cloves minced fresh garlic
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon sesame oil
1 teaspoon Chinese chili sauce
1/2 cup water
1 1/2 tablespoons cornstarch

 

Lemon Sauce Recipes

Good with chicken, shrimp or scallops, with onions, carrots, squash and a sprinkling of  walnuts sautéed in butter or olive oil

Lemon Sauce #1

1 1/2 cups dry white wine
1/2 cup lemon juice
1/2 teaspoon thyme
1 tablespoon chopped parsley
2 cloves minced garlic
2 tablespoons cornstarch

Lemon Sauce #2

1 1/2 cups chicken broth
3 tablespoons cornstarch
1/2 cup lemon juice
3 tablespoons brown sugar
3 tablespoons honey
1 - 2 teaspoons minced ginger
Stir ingredients together. 


Plum Sauce

Good with pork, with mushrooms, red and green bell pepper, onions, bean sprouts

8 fresh, ripe plums, seeded and quartered
1 tablespoon grated ginger
1 1/2 cups peach nectar
1/2 cup lime juice
2 tablespoons soy sauce
1 1/2 tablespoons cornstarch
1/4 teaspoon ground cinnamon
Scant teaspoon dry mustard
1 teaspoon orange zest

 

Spicy Five-Spice Sauce

Good with beef, pork or chicken, with onions, carrots, red and yellow bell peppers, and a few peanuts

1 1/2 cups beef or chicken broth
2 tablespoons soy sauce
2 tablespoons dark brown sugar, packed
1/2 teaspoon crushed red pepper, or to taste
1 teaspoon Chinese five-spice seasoning
3 tablespoons cornstarch

 

Honey Chili Sauce

Good with chicken over rice

Curry Stir-Fry Sauce Recipe

Good with beef, with onions
2 cloves garlic, minced
2 tablespoons soy sauce
1/4 cup water
1 teaspoon sesame oil
1/2 teaspoon sugar
1 1/2 tablespoons dry sherry
1 tablespoon satay sauce
1 heaping teaspoon curry powder
1 tablespoon cornstarch

 

Quick Vegetable Stir-Fry Sauce

Good with broccoli, cauliflower, jicama, and red bell pepper  (8-10 cups of prepared vegetables)

3/4 cup vegetable or chicken broth
1/2 teaspoon salt
1/2 teaspoon sugar
2 teaspoons sesame oil
2 teaspoons minced ginger
1/2 tablespoon cornstarch

 

Simple Greatness

Good with shrimp, lobster and/or scallops, with broccoli, button mushrooms, and bamboo shoots

3/4 cup chicken broth
1 tablespoon cornstarch
1 tablespoon oyster sauce
1/2 teaspoon sugar
1 teaspoon minced ginger
1/4 teaspoon ground pepper

Sweet and Sour Sauce

Good with chicken, shrimp or pork, with onions, pineapple and green bell pepper

1 cup water
1/2 cup distilled white vinegar
1/2 cup sugar
1/4 cup tomato paste
4 teaspoons cornstarch

 

Bourbon Sauce

Good with beef or pork, with onions, water chestnuts and red bell pepper

1/4 cup bourbon
1/2 cup soy sauce
1/2 cup dark brown sugar, packed
1/2 teaspoon crushed red pepper
1 tablespoon cornstarch

 

Mongolian Sesame Sauce

Good with lamb, with leeks, shredded carrots, green onions, red and green bell pepper, cabbage and bean sprouts (a little of each)  

1 tablespoon toasted sesame seeds
1/4 cup soy sauce
2 tablespoons dry sherry
2 tablespoons red wine vinegar
2 teaspoons sugar
1 teaspoon sesame oil
1 teaspoon chili oil, or to taste, optional
1 green onion, minced
2 cloves minced garlic
2 teaspoons minced ginger

Orange Stir Fry Sauce

Good with shrimp, chicken, duck, or pork, with carrots, celery and cashews

1 cup orange juice
1/2 cup honey
1/4 cup soy sauce
2 teaspoons minced ginger
1 1/2 tablespoons cornstarch

 

Black Bean Sauce

Good with beef or chicken, with onions/green onions, asparagus, red bell pepper, and bamboo shoots

3 tablespoons soy sauce
2 tablespoons dry sherry
1 tablespoon cornstarch
1/3 cup water
2 tablespoons black bean sauce or garlic black bean sauce
1/2 teaspoon sugar
1 teaspoon curry powder, optional
