Cinnamon Almonds Recipe

Glazed Cinnamon Almonds,

Two recipes, now. One for the oven, one for the crock pot.

I am convinced that, once experienced, you can smell the heavenly aroma of Cinnamon Almonds at work in the oven just by thinking about it. And with the crock pot version that aroma lasts for hours.  

Either recipe will make you the hero of the party. Wear a cape.

Glazed Cinnamon Almonds

These make a great gift-jar item with the recipe attached.

1 egg white
Pinch of salt
1 pound (about 3 to 3-1/2 cups) whole almonds
1/2 cup sugar
1 teaspoon cinnamon

In a medium bowl, beat the egg white and salt until soft peaks form. Pour the nuts into the bowl and stir to coat well.

Combine the sugar and cinnamon, and sprinkle over the almonds. Mix well.

Turn the mixture out onto a buttered shallow baking pan, like a jelly roll pan or cookie sheet, and spread the nuts out evenly.

Bake at 300°, stirring occasionally, until crisp, about 45 minutes.

Crock Pot Cinnamon Almonds

Similar to the first cinnamon almonds recipe, but with the addition of brown sugar and vanilla.

1 egg white
Pinch of salt
1 pound (3 to 3-1/2 cups) whole almonds
1 teaspoon vanilla
3/4 cup sugar
3/4 cup brown sugar
2 teaspoons cinnamon
Cooking spray
2 tablespoons water

Turn your crock pot to low.

Whip the egg white and vanilla together in a medium bowl until soft peaks form. Add the almonds and stir to coat them well.

Mix the sugars and cinnamon together and add the mixture to the bowl of coated almonds. Again, stir until coated with the cinnamon-sugar.

Apply the cooking spray to the inside of the crock pot and transfer the almonds. Cook for about 3 hours, stirring every 20 to 30 minutes. After 2 hours add the water and stir thoroughlyl. Don't forget it; that's what makes the coating crunchy.

Spread the nuts out as well as you can on wax paper or parchment paper. Cool and break apart.
