Dive right into the Skinny Dip recipe and don't worry about the calories or the taste!
This great cottage cheese dip is prepared with an herb and spice combo that doesn't taste skinny. Guiltless and very refreshing.
Try the mango version, too! Both receive very good reviews.
3 cups low-fat cottage cheese
3 tablespoons lemon juice
1 teaspoon dill weed or dried cilantro
1/2 teaspoon celery salt
1/4 teaspoon turmeric
1/4 teaspoon paprika
1/4 teaspoon black pepper
Salt to taste
In a blender or food processor, blend all ingredients, except the salt, until smooth. Taste, adding salt only if necessary.
Transfer to a serving bowl and garnish with extra paprika and dill weed, if desired. Chill before serving.
Serve with assorted fruit, vegetable dippers, and bagel bites or crackers. Makes about 3 cups.
Mango Skinny Dip
Substitute 1 cup finely chopped mango for the dill weed, celery salt, and turmeric.
Makes 3-1/2 to 4 cups.
